  • 2 large eggs, room temperature
  • 2 tbsp red food coloring (liquid or gel)
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 16 oz (450 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 tsp vanilla extract
  • 2 tbsp sour cream (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking soda, and salt. Stir until evenly combined.
  3. In a separate bowl, whisk buttermilk, vegetable oil, eggs, red food coloring, vanilla extract, and white vinegar until smooth.
  4. Slowly pour the wet ingredients into the dry ingredients, stirring gently with a spatula or mixer on low speed until just combined.
  5. Pour the batter evenly into the two prepared pans. Tap pans gently to release air bubbles.
  6. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cakes cool in the pans for 10 minutes, then turn out onto wire racks and cool completely.
  8. In a large bowl, beat softened cream cheese and butter until smooth and fluffy, about 3-4 minutes.
  9. Gradually add powdered sugar, beating on low speed until incorporated.
  10. Stir in vanilla extract, sour cream, and a pinch of salt. Beat until creamy and spreadable. Add milk if frosting is too thick.
  11. Trim cake tops if uneven. Cut one cake layer into 1-inch wide strips for the flag stripes.
  12. Arrange strips horizontally on serving plate, spreading a thin layer of frosting between each strip.
  13. Use the other whole cake layer as the background to create the flag field.
  14. Frost the entire cake with remaining cream cheese frosting, smoothing edges for a clean finish.
  15. Refrigerate the assembled cake for at least 30 minutes to set the frosting before slicing.
  16. For clean slices, dip knife in hot water and wipe dry before cutting each slice.
