  • 1 1/2 cups (360ml) lukewarm water (around 75°F / 24°C)

Instructions

  1. Mix the flour, instant yeast, and salt in a large bowl until evenly combined. Add lukewarm water and stir until a shaggy, sticky dough forms. No kneading needed.
  2. Cover the bowl tightly with plastic wrap or a clean kitchen towel. Let the dough rise at room temperature for 12 to 18 hours until doubled in size and bubbly.
  3. Flour your work surface and gently scrape out the dough. Fold it over itself a couple of times to form a rough ball. Place seam-side down on parchment paper. Cover and let rest for 30 to 60 minutes while preheating the oven.
  4. Preheat a Dutch oven with its lid inside your oven to 450°F (230°C) for 30 minutes.
  5. Carefully remove the hot Dutch oven. Lift the parchment paper with the dough and place it inside the pot. Cover with the lid and bake for 30 minutes.
  6. Remove the lid and bake uncovered for another 15 minutes until the crust is deep golden brown and crackly.
  7. Transfer the bread to a cooling rack and let it cool completely for at least 1 hour before slicing.

Notes

Use a Dutch oven or heavy pot to trap steam for a crispy crust. Do not skip the long rise for flavor and texture. Handle dough gently to keep air bubbles intact. Cool bread completely before slicing to avoid gummy crumb. Reheat in oven or toast to revive crust.
