  • 2 teaspoons vanilla extract
  • 1 tablespoon white vinegar
  • 1 tablespoon black gel food coloring
  • 8 ounces (226 grams) cream cheese, softened (for frosting)
  • ½ cup (113 grams) unsalted butter, softened (for frosting)
  • 3 cups (360 grams) powdered sugar, sifted (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 1 to 2 tablespoons milk or cream (for frosting consistency)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a large bowl, beat the granulated sugar and vegetable oil until smooth. Add eggs one at a time, beating well after each addition.
  4. Stir in buttermilk, vanilla extract, white vinegar, and black gel food coloring until combined.
  5. Slowly add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing.
  6. Divide the batter evenly between the prepared pans. Tap pans gently to release air bubbles.
  7. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  8. While cakes bake, prepare the frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract. Add milk or cream as needed for spreading consistency.
  9. Let cakes cool in pans for 10 minutes, then invert onto cooling racks and cool completely.
  10. Assemble the cake by placing one layer on a serving plate. Spread a generous layer of frosting on top.
  11. Add the second layer and cover the entire cake with a thin crumb coat. Chill for 15 minutes to set.
  12. Apply a final thick layer of frosting. Pipe concentric circles of frosting or chocolate glaze starting from the center.
  13. Use a toothpick or skewer to drag lines from the center outward to create a spiderweb design.
  14. If frosting is too soft to pipe, chill it in the fridge for 10 minutes before decorating.
