Classic Homemade Vanilla Pound Cake

A simple, moist, and tender vanilla pound cake with a buttery flavor and soft crumb, perfect for any occasion.

  • 1 cup (2 sticks or 227 g) unsalted butter, softened
  • 1 ½ cups (300 g) granulated sugar
  • 4 large eggs, room temperature
  • 2 cups (250 g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 2 teaspoons pure vanilla extract
  • ½ cup (120 ml) whole milk, room temperature

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or non-stick spray, then lightly dust with flour or line with parchment paper.
  2. In a large bowl, beat the softened butter and granulated sugar together on medium speed for 4-5 minutes until pale, fluffy, and light.
  3. Add the eggs one at a time, mixing well after each addition until the batter is smooth and creamy.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Sifting is optional but recommended.
  5. Alternately add the dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix on low speed just until combined after each addition.
  6. Gently fold in the vanilla extract with a spatula, ensuring even distribution without overmixing.
  7. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  8. Bake in the center of the oven for 55-65 minutes. Start checking at 50 minutes by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  9. Let the cake cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Once cool, slice with a serrated knife and serve plain, dusted with powdered sugar, or with fresh fruit or ice cream.

Notes

Use room temperature ingredients for best results. Cream butter and sugar thoroughly to trap air for a tender crumb. Avoid overmixing after adding flour to keep cake soft. Tent with foil if top browns too quickly. Let cake cool in pan 15 minutes before removing to prevent sogginess.
