This red, white, and blue berry trifle is a no-bake dessert that layers vanilla cake, fresh berries, and a creamy mascarpone mixture for a stunning patriotic treat. Perfect for Labor Day, it’s easy to assemble and tastes even better when made ahead.

  • 1 store-bought pound cake or angel food cake (about 16 ounces), cut into 1-inch cubes
  • 2 cups fresh strawberries, hulled and sliced
  • 2 cups fresh blueberries
  • 2 cups fresh raspberries
  • 2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces mascarpone cheese or cream cheese, softened
  • 1/4 cup granulated sugar
  • 2 tablespoons fresh lemon juice
  • Optional: fresh mint leaves for garnish

Instructions

  1. Prep the berries: In a medium bowl, combine the sliced strawberries, blueberries, and raspberries. Add 1/4 cup granulated sugar and 2 tablespoons lemon juice. Stir gently to coat. Let this sit for 15-20 minutes while you prepare the other components.
  2. Whip the cream mixture: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, vanilla extract, and softened mascarpone cheese. Using an electric mixer, start on low speed and gradually increase to medium-high. Whip until stiff peaks form, about 3-4 minutes with a stand mixer or 5-6 minutes with a hand mixer.
  3. Cube the cake: Cut the pound cake or angel food cake into 1-inch cubes. If using pound cake, leave the crust on. Set the cubes aside in a single layer on a baking sheet or plate.
  4. Start layering: Spoon about one-third of the macerated berries into the bottom of your trifle dish, including some of the syrup. Spread them into an even layer. Top with half of the cake cubes, arranging them in a single layer as much as possible. Spoon half of the whipped cream mixture over the cake cubes and spread it gently to the edges. Notes

Don’t skip the maceration step—it creates the syrup that soaks into the cake. Whip cream to stiff peaks for structure. Let the trifle rest overnight for best flavor and texture. Keep refrigerated until serving.
