A quick and refreshing summer drink combining sweet watermelon, fresh lemon juice, and aromatic mint leaves blended into a frosty slushie.

  • 4 cups (600g) seedless watermelon chunks, chilled
  • 1/2 cup (120ml) fresh lemon juice (about 3 lemons)
  • 1/4 cup (15g) fresh mint leaves, tightly packed
  • 1/4 cup (50g) granulated sugar, adjust to taste
  • 1 cup (240ml) cold water
  • 2 cups (about 300g) crushed or cubed ice

Instructions

  1. Cut about 4 cups (600g) of seedless watermelon into chunks. Remove any seeds. Chill the chunks in the fridge for at least 30 minutes if you want an extra cold slushie.
  2. Roll the lemons on the counter to loosen juices, then slice and extract about 1/2 cup (120ml) of fresh lemon juice using a citrus juicer. Strain out seeds.
  3. In a blender, add the watermelon chunks, fresh lemon juice, 1/4 cup (50g) sugar, 1/4 cup (15g) fresh mint leaves, and 1 cup (240ml) cold water. Blend on high until smooth and the mint is finely incorporated.
  4. Add 2 cups (about 300g) of crushed or cubed ice to the blender. Pulse a few times until the mixture turns slushie-like — icy but still pourable. Avoid over-blending.
  5. Taste and adjust sweetness by adding more sugar or a squeeze of lemon if desired. Blend briefly to mix.
  6. Pour into chilled glasses and garnish with a sprig of mint or a small lemon wedge. Serve immediately.

Notes

Do not freeze watermelon chunks before blending to avoid grainy texture. Use crushed ice for best slushie consistency. Adjust sugar to taste. Can substitute lemon with lime or add alcohol for an adult version. Store mixture without ice in fridge up to 24 hours; add ice and blend before serving.
