  • Pinch of salt and pepper

Instructions

  1. Rinse the strawberries under cold water and pat dry gently with a towel. Slice each berry into thin, even pieces about ¼ inch thick.
  2. Heat a dry skillet over medium heat. Add the sliced almonds in a single layer and toast, stirring frequently, until golden brown and fragrant—about 3 to 4 minutes. Transfer to a plate to cool.
  3. In a small bowl or jar, combine balsamic vinegar, olive oil, honey, and a pinch of salt and pepper. Whisk or shake vigorously until well blended. Adjust sweetness or acidity as needed.
  4. Place baby spinach in a large salad bowl. Add the sliced strawberries, toasted almonds, and crumbled feta cheese.
  5. Drizzle the dressing evenly over the salad. Toss gently to coat everything without bruising the spinach or crushing the strawberries. Serve immediately.
