  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 large egg yolk
  • 23 tablespoons cold water
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt (plain or vanilla; dairy-free coconut yogurt for vegan)
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • Optional: fresh mint leaves for garnish
  • Optional glaze: 2 tablespoons apricot jam (warmed and strained)

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, and salt. Add cold cubed butter and pulse with a food processor or cut with a pastry cutter until mixture resembles coarse crumbs.
  2. Stir in egg yolk and 2 tablespoons cold water. Add more water if needed, knead gently until dough comes together. Wrap in plastic and chill for 30 minutes.
  3. Preheat oven to 350°F (175°C). Roll dough into a 12-inch circle on a floured surface. Transfer to pizza pan or baking sheet. Prick dough with fork to prevent puffing. Bake 15-18 minutes until edges are golden. Cool completely.
  4. Beat cream cheese with powdered sugar and vanilla extract until smooth. Fold in Greek yogurt until creamy.
  5. Spread cream cheese mixture evenly over cooled crust. Arrange strawberries and blueberries on top in a fun pattern.
  6. Optional: Brush fruit lightly with warmed apricot jam for shine. Chill in fridge for 15 minutes before serving.
  7. Slice into wedges and serve. Keep leftovers refrigerated and consume within 2 days.
