Vibrant Dr Seuss Rainbow Jello Stacks

A fun, colorful layered gelatin dessert perfect for parties and nostalgic celebrations, featuring bright fruit-flavored jello layers with an optional creamy white layer.

  • 67 packets flavored gelatin (cherry, orange, lemon, lime, blueberry, grape, strawberry)
  • Boiling water
  • Cold water or ice cubes
  • Sweetened condensed milk (optional)
  • Nonstick spray or oil
  • Clear glass or plastic cups

Instructions

  1. Dissolve 1 packet (3 oz / 85g) of red flavored gelatin in 1 cup (240 ml) boiling water. Stir for 2 minutes until fully dissolved.
  2. Add 1/2 cup (120 ml) cold water, mix gently.
  3. Pour mixture evenly into clear serving cups or molds, filling about 1/7th of the container.
  4. Refrigerate for 15-20 minutes until firm but not fully hardened.
  5. Repeat the process with orange gelatin packet: dissolve in 1 cup boiling water, stir, add cold water.
  6. Run a knife or toothpick gently around the edge of the red layer to loosen it slightly.
  7. Pour orange jello slowly over the back of a spoon onto the red layer to avoid mixing.
  8. Refrigerate for 15-20 minutes until set.
  9. Continue with lemon, lime, blue, grape, and strawberry layers following the same steps.
  10. Each layer should be about 1/7th of the container’s height.
  11. For the optional creamy white layer, dissolve 1 packet unflavored gelatin in 1/4 cup (60 ml) boiling water.
  12. Combine 3/4 cup (180 ml) sweetened condensed milk with 3/4 cup (180 ml) cold water.
  13. Mix dissolved gelatin into the milk mixture.
  14. Pour gently over the last colored layer and chill until completely set.
  15. After all layers are set, chill the stacks for at least 2 hours to ensure firmness.
  16. To serve, run a knife gently around the edges if using molds, then carefully unmold or serve directly in cups.

Notes

Use fresh gelatin packets for best setting. Pour each layer slowly over the back of a spoon to avoid mixing colors. Chill each layer until firm but not rock-hard before adding the next to prevent bleeding. Nonstick spray helps with unmolding. For a dairy-free creamy layer, substitute sweetened condensed milk with coconut cream and sweetener. Freezing is not recommended as it changes texture.
