These vibrant Dr. Seuss rainbow fruit kabobs are a quick, colorful, and healthy snack packed with fresh fruits that appeal to all ages. Perfect for parties, after-school snacks, or a refreshing treat, they bring joy and nutrition in every bite.

Ingredients

  • Strawberries, fresh, hulled and halved
  • Mandarin oranges, peeled and segmented
  • Pineapple chunks, fresh or canned in juice, drained
  • Green grapes, seedless and halved if large
  • Blueberries, fresh and plump
  • Purple grapes or blackberries, washed
  • Lime or lemon juice, about 1 tablespoon
  • Honey or maple syrup (optional), about 1 teaspoon
  • Wooden skewers, soaked in water for 20 minutes

Instructions

  1. Rinse all your fruit thoroughly under cold water. Hull and halve the strawberries, peel and segment the mandarin oranges, drain pineapple chunks, halve large grapes, and ensure blueberries and blackberries are clean.
  2. In a large mixing bowl, gently combine all the prepared fruit. Squeeze about 1 tablespoon of fresh lime or lemon juice over the fruit and toss lightly. Add a teaspoon of honey or maple syrup if extra sweetness is desired.
  3. Start threading the fruit onto the skewers, following the rainbow order: red (strawberries), orange (mandarins), yellow (pineapple), green (grapes), blue (blueberries), and purple (grapes or blackberries). Each skewer should hold about 6 to 8 pieces of fruit, alternating colors.
  4. Place the finished kabobs on a serving platter. Optionally, spritz with extra citrus juice before serving to keep colors vibrant and flavors fresh.

Soak wooden skewers in water for 20 minutes if planning to grill or roast to prevent burning. Assemble kabobs just before serving to keep fruits fresh and colorful.
