Vibrant Dr Seuss Multicolor Mac Cheese Cups

Bright, swirling multicolor mac & cheese cups that are fun, playful, and perfect for kids’ parties or family gatherings. This easy recipe combines classic creamy cheese flavor with whimsical colors for a delightful twist.

  • 2 cups (200g) elbow macaroni
  • 2 cups shredded cheddar cheese (200g)
  • 1 ½ cups (360ml) whole milk
  • 3 tablespoons (45g) unsalted butter
  • 3 tablespoons (24g) all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Food coloring gels: red, blue, green, and yellow (a few drops each)
  • Optional: ½ teaspoon paprika or smoked paprika

Instructions

  1. Bring a large pot of salted water to a boil. Add 2 cups (200g) elbow macaroni and cook until just al dente, about 7-8 minutes. Drain and rinse under cold water to stop cooking. Drain well and set aside.
  2. In the same saucepan, melt 3 tablespoons (45g) unsalted butter over medium heat. Once melted, whisk in 3 tablespoons (24g) all-purpose flour and cook for 1-2 minutes, stirring constantly to create the roux.
  3. Slowly whisk in 1 ½ cups (360ml) whole milk, continuing to whisk to prevent lumps. Cook, stirring often, until the sauce thickens and coats the back of a spoon, about 5 minutes.
  4. Remove from heat and stir in 2 cups (200g) shredded cheddar cheese until melted and smooth. Add 1 teaspoon salt and ½ teaspoon black pepper (plus optional paprika), tasting and adjusting seasoning as needed.
  5. Evenly split the cooked macaroni into 4 small bowls, one for each color you plan to create.
  6. Add a few drops of food coloring gel to each bowl and gently stir to coat the pasta evenly without overmixing to avoid muddy colors.
  7. Add about ¼ of the cheese sauce to each colored pasta bowl and gently fold together until well coated.
  8. Preheat oven to 350°F (175°C). Spoon small amounts of each colored mac & cheese into each muffin cup, layering and swirling colors to create a rainbow effect. Fill each cup to the top but don’t overpack.
  9. Place the muffin tin on a baking sheet and bake for 15-18 minutes, or until the edges are golden and the cups hold their shape.
  10. Let the cups cool for 5 minutes before carefully removing from the tin. Serve warm.

Notes

Use gel-based food coloring for vibrant colors without thinning the sauce. Undercook pasta slightly as it will bake further. Be gentle when folding cheese sauce into colored pasta to maintain color vibrancy. For extra crispy tops, sprinkle grated Parmesan or breadcrumbs before baking. Muffin tins can be greased or lined with silicone liners for easy removal.
