Ingredients

Scale
  • 2 lbs (900 g) ground beef (85% lean) or ground turkey
  • 1 can refried beans or black beans, drained
  • Walking taco seasoning (1 tbsp chili powder, 1 tsp cumin, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp salt, 1/4 tsp black pepper)
  • Individual-sized crunchy tortilla chip bags (Fritos or Doritos)
  • 2 cups (200 g) shredded cheddar cheese
  • 1 cup (150 g) diced tomatoes
  • 1/2 cup (50 g) chopped green onions
  • 2 cups (60 g) shredded lettuce
  • Jalapeño slices (fresh or pickled, optional)
  • 1/4 cup (15 g) fresh cilantro, chopped
  • 1 cup (240 ml) sour cream or Greek yogurt
  • 1 cup (230 g) guacamole or sliced avocado
  • 1 cup (240 ml) salsa or pico de gallo
  • Optional extras: pickled jalapeños or banana peppers, hot sauce varieties, fresh lime wedges, black olives sliced, crumbled queso fresco or cotija cheese

Instructions

  1. Prepare the walking taco seasoning by mixing chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and black pepper in a small bowl.
  2. Heat a large skillet over medium-high heat. Add ground beef or turkey and cook for 6-8 minutes until browned and no longer pink. Drain excess fat if needed.
  3. Sprinkle the prepared seasoning over the cooked meat. Pour in 1/4 cup (60 ml) water and stir to combine. Reduce heat to low and simmer for 5 minutes. If using beans, stir in the drained beans now.
  4. Chop tomatoes, green onions, lettuce, jalapeños, and cilantro. Shred cheese and prepare guacamole. Arrange all toppings in separate bowls or platters.
  5. Set up the walking taco bar by placing individual chip bags upright on the serving table with all toppings nearby along with serving spoons or tongs, napkins, and small plates.
  6. Guests open chip bags, spoon seasoned meat inside, and add their favorite toppings.
  7. Enjoy the casual, mess-friendly walking tacos while mingling.

Notes

Toast chips lightly at 300°F (150°C) for 5 minutes to soften slightly and prevent breaking. Drain cooked meat well to avoid soggy chips. Keep wet toppings chilled until serving. Label toppings for allergy awareness. Use a slow cooker to keep meat warm during the party. Add a squeeze of fresh lime juice before serving for brightness.
