  • 4 leaves green leaf lettuce (or romaine, dried well)
  • 1 medium tomato (sliced into 8 thin rounds, patted dry)
  • 4 tablespoons cream cheese (softened)
  • 2 tablespoons mayonnaise (Duke’s or Hellmann’s)
  • 1 teaspoon Dijon mustard (optional)
  • Salt and black pepper (a pinch for the tomatoes)
  • 4 toothpicks or small skewers (optional, for holding together)
  • Wax paper or parchment sheets (for wrapping)

Instructions

  1. Cook the bacon (5-7 minutes): Lay the bacon strips in a cold skillet. Turn the heat to medium and cook until deep golden brown and crispy, about 5-7 minutes, flipping once. Transfer to a paper towel-lined plate. Let it cool completely.
  2. Prep the produce (3 minutes): Wash and thoroughly dry the lettuce leaves. Slice the tomato into 8 thin rounds, then lay them on a paper towel and sprinkle with a tiny pinch of salt. Let them sit for 2 minutes, then pat dry.
  3. Make the spread (1 minute): In a small bowl, mix the softened cream cheese with mayonnaise and Dijon mustard until smooth. Add a crack of black pepper.
  4. Slice the croissants (30 seconds): Using a serrated knife, carefully slice each croissant horizontally. Don’t cut all the way through — leave one side attached like a hinge.
  5. Spread both sides (1 minute): Open each croissant and spread the cream cheese mixture on both the top and bottom halves. Be generous but not excessive — about 1 tablespoon per croissant.
