  • 1 pound (450g) lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (10.5 oz / 298g) condensed cream of mushroom soup
  • 1 cup (240ml) sour cream, full-fat or light
  • 2 cups (200g) shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 cup (150g) frozen mixed vegetables (peas, carrots, corn) – optional
  • 1 tablespoon (15ml) Worcestershire sauce
  • Salt and pepper to taste
  • 1 tablespoon (15g) butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the bacon in a cold skillet over medium heat until crisp, about 8-10 minutes. Drain on paper towels and crumble once cooled.
  3. In the same skillet, discard most of the bacon fat leaving about 1 tablespoon. Add ground beef and cook over medium-high heat until no longer pink, about 6-8 minutes, breaking it up as it cooks.
  4. Add chopped onion and minced garlic to the beef. Stir and cook until softened and fragrant, about 3-4 minutes. Add Worcestershire sauce and mix well.
  5. In a large bowl, combine condensed cream of mushroom soup, sour cream, salt, and pepper. Stir until smooth.
  6. Fold the cooked beef mixture, frozen mixed vegetables (if using), and half of the crumbled bacon into the creamy mixture.
  7. Spread the beef and cream mixture evenly in the bottom of a 9×13 inch casserole dish.
  8. Top with shredded cheddar cheese, then arrange frozen tater tots in a single layer on top.
  9. Bake uncovered for 35-40 minutes, or until tater tots are golden and crispy and the filling is bubbly.
  10. Sprinkle the remaining crumbled bacon over the casserole. For extra melty cheese, bake for an additional 5 minutes or broil for 1-2 minutes, watching closely to avoid burning.
  11. Remove from oven and let the casserole rest for 5-10 minutes before serving.

Notes

If tater tots brown too quickly, loosely cover casserole with foil halfway through baking. Stir beef mixture well before layering for even flavor. Let casserole rest before serving to set. Use dairy-free sour cream and cheese for dairy-free version. Verify soup is gluten-free or make homemade gluten-free version for gluten-free diet.
