A hearty casserole that combines the bold flavors of a loaded bacon cheeseburger with the comforting texture of meatloaf, perfect for family dinners or gatherings.

Ingredients

Scale
  • 2 pounds ground beef (85% lean)
  • 1 cup breadcrumbs
  • 2 eggs
  • 1 finely diced onion
  • 1/4 cup ketchup
  • 1 tablespoon mustard
  • Salt and pepper to taste
  • Cooked bacon slices
  • Shredded cheddar cheese
  • Optional: diced pickles
  • Optional toppings: lettuce, tomato slices, barbecue sauce

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. In a large mixing bowl, combine ground beef, breadcrumbs, eggs, onion, ketchup, mustard, and a pinch of salt and pepper. Mix gently until everything is combined—don’t overwork the meat.
  3. Press half of the meat mixture into the bottom of the baking dish to form the first layer.
  4. Add a layer of cooked bacon slices, followed by a layer of shredded cheddar cheese. Optionally, sprinkle diced pickles for added flavor.
  5. Top with the remaining meat mixture, spreading evenly to cover the bacon and cheese layers.
  6. Cover the dish with foil and bake for 40 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the meatloaf is cooked through and the cheese is bubbling.
  7. Let the casserole rest for 5-10 minutes before slicing and serving. Garnish with optional lettuce, tomato slices, or barbecue sauce for extra flavor.
