  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened to room temperature
  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • ¾ cup (about 120g) rainbow sprinkles (jimmies or confetti-style)
  • Optional: ½ cup (120g) sour cream for extra moisture and tang

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
  2. In a large bowl, sift together the flour, baking powder, and salt. Set aside.
  3. Using an electric mixer, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  5. Reduce mixer speed to low. Add the sifted dry ingredients in three parts, alternating with the milk in two parts, starting and ending with dry ingredients. Mix just until combined.
  6. Optional: Gently fold in sour cream for extra moisture.
  7. Toss sprinkles with a tablespoon of flour to coat lightly.
  8. Fold the coated sprinkles gently into the batter using a rubber spatula.
  9. Divide the batter evenly between the prepared pans and smooth the tops.
  10. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  11. Let cakes cool in pans on a wire rack for 10 minutes, then turn out onto racks to cool completely.

Notes

Coat sprinkles with flour before folding to prevent color bleeding. Use room temperature ingredients for best results. Do not overmix batter after adding flour to avoid a tough cake. Let cake layers cool completely before frosting. Tent cake with foil if browning too fast. Adjust milk if batter is too thick.
