Instructions

  1. Place chicken breasts between two pieces of plastic wrap or parchment and pound to about 1/2-inch thickness. Pat dry with paper towels.
  2. In a shallow bowl, mix flour, salt, black pepper, garlic powder, and smoked paprika. Dredge each chicken breast in the mixture, coating both sides and shaking off excess.
  3. Heat olive oil and 2 tablespoons butter in a large skillet over medium-high heat until the butter foams and oil shimmers.
  4. Add chicken breasts in a single layer (work in batches if needed). Sear each side for 5-7 minutes, turning once, until golden brown and cooked through (internal temp 165°F).
  5. While chicken cooks, make the glaze: In a small saucepan over low heat, combine 1/3 cup butter, 1/4 cup honey, 2 tablespoons powdered sugar, a pinch of salt, and cayenne if using. Whisk until smooth and glossy. Do not boil.
