Tasty Firework Brownie Bites with Sparkling Pop Rocks

These brownie bites combine fudgy chocolate goodness with a playful crackle from sparkling pop rocks, creating a fun and unexpected dessert perfect for parties or quick treats.

  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (95g) all-purpose flour, sifted
  • 1/3 cup (35g) unsweetened cocoa powder, preferably Dutch-processed
  • 1 teaspoon espresso powder (optional)
  • 1/4 teaspoon salt
  • About 2 teaspoons sparkling pop rocks candy (cherry or watermelon flavor recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving overhang for easy removal.
  2. In a large bowl, whisk melted butter and sugar until combined but not grainy, about 1 minute. Add eggs one at a time, whisking well after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together flour, cocoa powder, espresso powder, and salt.
  4. Gradually fold dry ingredients into wet ingredients using a spatula until just combined; avoid overmixing.
  5. Gently fold in about 2 teaspoons of pop rocks candy, being careful not to crush them. Save some pop rocks to sprinkle on top.
  6. Pour batter into prepared pan and smooth the top evenly. Sprinkle remaining pop rocks evenly over the surface.
  7. Bake for 22-25 minutes until edges are set but center is slightly gooey; test with a toothpick which should come out with moist crumbs.
  8. Cool brownies completely in the pan on a cooling rack to prevent premature popping of pop rocks.
  9. Cut into 1.5-inch squares and serve at room temperature to enjoy the popping effect.

Notes

Fold pop rocks in gently at the end and sprinkle some on top before baking to preserve their popping effect. Let brownies cool completely before cutting to avoid premature popping. Use Dutch-processed cocoa powder for richer flavor. For gluten-free, substitute flour with gluten-free blend. For dairy-free, replace butter with coconut oil or vegan margarine.
