  • 2 tablespoons granulated sugar
  • 1 tablespoon salt (kosher or sea salt preferred)
  • 3 garlic cloves, peeled and lightly crushed
  • 1 teaspoon dried oregano (Mexican oregano if available)
  • 1 teaspoon whole black peppercorns
  • 1 bay leaf (optional)

Instructions

  1. Prepare the Vegetables (10 minutes): Rinse jalapeños thoroughly. Slice into thin rings about 1/8 inch thick. Remove seeds and membranes for less heat if desired. Peel carrots and cut into thin matchsticks similar in size to jalapeño rings. Place both in a mixing bowl and set aside.
  2. Make the Pickling Brine (5 minutes): In a small saucepan, combine white vinegar, apple cider vinegar, water, sugar, and salt. Bring to a gentle boil over medium heat, stirring until sugar and salt dissolve. Remove from heat and add garlic cloves, dried oregano, black peppercorns, and bay leaf. Let steep for 5 minutes.
  3. Pack the Jar (5 minutes): Layer jalapeño slices and carrot matchsticks tightly but without crushing into sterilized glass jar(s). Pour hot brine over the veggies, ensuring they are fully submerged. Leave about 1/2 inch headspace at the top.
  4. Cool and Refrigerate (at least 24 hours): Seal jar tightly. Let cool to room temperature, then refrigerate. Best after 3 days for full flavor development.
  5. Enjoy and Store: Use within 3-4 weeks for best crunch and flavor. Always use clean utensils to avoid contamination.
