A refreshing and easy-to-make mocktail blending fresh strawberries and lychee with sparkling water, perfect for Valentine’s Day or any special occasion.

  • 1/2 cup canned lychee fruit, drained
  • 2 tablespoons lychee syrup from canned lychee
  • 1 tablespoon fresh lemon juice
  • 1 cup cold sparkling water
  • Ice cubes as needed
  • A small handful of fresh mint leaves for garnish

Instructions

  1. Prepare the Fruit Puree (5 minutes): Place the fresh strawberries and canned lychee along with lychee syrup into a blender. Blend until smooth but still slightly textured. Add a tablespoon of water if too thick.
  2. Add Lemon and Mix (2 minutes): Pour in freshly squeezed lemon juice to the puree. Pulse to combine and taste. Add more lychee syrup if desired but avoid overpowering the fruit flavors.
  3. Assemble the Mocktail (3 minutes): Fill serving glass halfway with ice cubes. Pour half the fruit puree over the ice. Slowly top with chilled sparkling water. Gently stir once or twice to combine without losing bubbles. Garnish with mint leaves and a strawberry slice.

Notes

Serve immediately for best fizz and fresh taste. Avoid over-stirring after adding sparkling water to keep bubbles. Use ripe strawberries for best flavor. Frozen strawberries can be used if thawed first. For a low-sugar version, use lychee canned in natural juice instead of syrup and skip extra syrup. Muddling mint adds aroma but avoid overdoing to prevent bitterness.
