Ingredients

  • Thinly sliced salami
  • Mini mozzarella balls (bocconcini or ciliegine)
  • Pitted black olives
  • Cream cheese
  • Fresh basil leaves (optional)
  • Toothpicks

Instructions

  1. Drain the mozzarella balls and black olives. Slice the olives into thin rings to create the ‘pupils’ for your eyeballs.
  2. Lay out your salami slices on a clean cutting board. Flatten them slightly if they’re too thick by pressing them down with the back of a spoon.
  3. Take one mozzarella ball and place it in the center of a salami slice. Wrap the salami around the mozzarella, ensuring the edges overlap slightly. Secure it with a toothpick.
  4. Dab a tiny amount of cream cheese on the top center of each mozzarella ball. Place an olive ring on top of the cream cheese to create the ‘iris’ of the eyeball.
  5. If you’re using fresh basil, tuck a small leaf under the salami wrapping for a pop of green color and added flavor.
  6. Arrange the eyeballs on a serving platter and cover them with plastic wrap. Refrigerate for at least 15 minutes to let them set.
  7. Before serving, remove the plastic wrap and garnish the platter with extra basil leaves or Halloween-themed decorations.
