These Monster Eye Balls Rice Krispie Bites are the perfect Halloween treat that’s fun, festive, and ridiculously easy to make. They combine crispy cereal, sweet marshmallow, and creepy candy eyes for a bite-sized spooky delight.

Ingredients

Scale
  • 6 cups (150g) Rice Krispie cereal
  • 10 oz (284g) mini marshmallows
  • 1/4 cup (56g) unsalted butter
  • Food coloring (green, purple, or orange)
  • Candy eyes
  • Halloween-themed sprinkles (optional)

Instructions

  1. Line a baking sheet with wax or parchment paper and set aside. Gather candy eyes and sprinkles.
  2. In a medium saucepan, melt 1/4 cup (56g) unsalted butter over low heat. Add 10 oz (284g) mini marshmallows and stir until completely melted and smooth.
  3. Remove the pan from heat and stir in a few drops of food coloring until the desired color is achieved.
  4. Pour the marshmallow mixture into a large mixing bowl with 6 cups (150g) Rice Krispie cereal. Use a rubber spatula to mix until the cereal is evenly coated.
  5. Grease your hands or wear gloves to shape the mixture into balls about 1.5 inches in diameter.
  6. Press candy eyes into the balls while they’re still slightly sticky. Add sprinkles if desired.
  7. Place the decorated balls on the prepared baking sheet and let them set for about 15 minutes.

Notes

[‘Work quickly as the marshmallow mixture can harden as it cools.’, ‘Use food-safe gloves to make shaping the balls easier.’, ‘Experiment with swirling two colors together for a marbled effect.’, ‘If candy eyes don’t stick well, use a tiny bit of melted marshmallow as glue.’]
