  • 4 cups cooked rice (day-old white jasmine or basmati preferred)
  • 3 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon chili paste
  • 1 teaspoon sesame oil
  • 2 large eggs, lightly beaten
  • 2 stalks green onions, chopped
  • 1 cup diced carrots and peas (optional)
  • 1 teaspoon red chili flakes (optional)
  • Salt to taste
  • Freshly ground black pepper to taste

Instructions

  1. Mince the garlic, chop the vegetables, and beat the eggs. Break up any clumps in leftover rice with your hands or a fork.
  2. In a wok or large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced carrots and peas (or your chosen vegetables) and sauté for about 3 minutes until slightly softened.
  4. Push the vegetables to one side of the pan. Pour the beaten eggs into the empty space and scramble until cooked. Mix the eggs with the vegetables.
  5. Increase the heat to medium-high. Add the cooked rice to the pan and toss to combine with the garlic butter and vegetables.
  6. Stir in the soy sauce, chili paste, sesame oil, and red chili flakes (if using). Toss everything until the rice is evenly coated and heated through.
  7. Sprinkle the chopped green onions over the fried rice and give it a final toss.
  8. Transfer the rice to a serving bowl and enjoy hot!
