Sparkling Pomegranate Champagne Cocktail with Sugar Rim

A festive and easy-to-make cocktail combining crisp champagne with tart pomegranate juice, finished with a sparkling sugar rim for a touch of elegance.

  • 750 ml Champagne or Sparkling Wine (brut or dry style)
  • 1 cup (240 ml) Fresh Pomegranate Juice
  • Granulated superfine or caster sugar (for rim)
  • Lime wedges (for rimming)
  • Pomegranate seeds (for garnish)
  • Optional: 1 oz (30 ml) Triple Sec or Orange Liqueur per drink

Instructions

  1. Prepare the glasses by rubbing a lime wedge around each rim to moisten it.
  2. Pour superfine sugar onto a small plate, then gently dip the rims into the sugar, twisting slightly to coat evenly. Set aside to dry for a few minutes.
  3. In a cocktail shaker or mixing glass, pour 1 cup (240 ml) of fresh pomegranate juice.
  4. If using, add 1 oz (30 ml) of triple sec or orange liqueur. Stir gently to combine—avoid shaking.
  5. Chill the champagne or sparkling wine to about 45°F (7°C).
  6. Fill each prepared flute about one-third full with the pomegranate mixture (approximately 3 oz or 90 ml).
  7. Slowly top off with champagne, pouring gently down the side of the glass to preserve bubbles. Stop filling about half an inch from the rim.
  8. Drop a few fresh pomegranate seeds into each glass for garnish.
  9. Serve immediately and enjoy.

Notes

Use superfine sugar for the rim for best adhesion. Rim glasses just before serving to prevent sugar from dissolving. Pour champagne slowly down the side of the glass to preserve bubbles. Chill glasses in the freezer for 10 minutes before serving for extra chill but avoid frost buildup.
