  • 12 ounces dry spaghetti, cooked al dente
  • 3 cups shredded cooked chicken
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup chicken broth
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) diced tomatoes, drained
  • 1 cup diced green bell pepper
  • 1 small white onion, diced finely
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 baking dish lightly with cooking spray or oil.
  2. Boil the spaghetti in salted water according to package instructions until al dente. Drain and set aside.
  3. If you don’t already have cooked chicken, boil or bake chicken breasts until fully cooked and shred them with two forks.
  4. Heat the olive oil in a skillet over medium heat. Add the diced onion and bell pepper, cooking until softened and fragrant (about 5 minutes).
  5. In a large mixing bowl, whisk together cream of chicken soup, sour cream, chicken broth, garlic powder, paprika, and a pinch of salt and pepper until smooth.
  6. Fold in the cooked spaghetti, shredded chicken, sautéed vegetables, diced tomatoes, and 1 cup of shredded cheese. Mix everything until well combined.
  7. Pour the mixture into the greased baking dish, spreading it out evenly. Sprinkle the remaining 1 cup of cheese on top.
  8. Bake for 25-30 minutes, or until the cheese is bubbly and golden.
  9. Let the casserole rest for 5-10 minutes before serving to allow it to set. Serve warm and enjoy!
