  • 1 packet (about 1 tablespoon) ranch seasoning mix
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded cheddar cheese
  • Optional: green onions or chives for garnish
  • Optional: pinch of black pepper

Instructions

  1. Cook 6 slices of bacon until crisp (8-10 minutes in a skillet over medium heat or 5-6 minutes in a microwave). Drain on paper towels and crumble once cooled. Set aside.
  2. In a medium bowl, combine 8 ounces softened cream cheese with 1 packet ranch seasoning mix. Stir until smooth and well blended.
  3. Place 2 pounds boneless, skinless chicken breasts in the slow cooker. Leave whole or cut into large chunks.
  4. Spread the cream cheese and ranch mixture evenly over the chicken breasts.
  5. Cover and cook on low for 4 to 6 hours, or on high for 2 to 3 hours, until chicken is tender and easily shreddable.
  6. Remove chicken from slow cooker and shred with two forks. Return shredded chicken to slow cooker and stir to coat with sauce.
  7. Sprinkle 1 cup shredded cheddar cheese and crumbled bacon over the chicken. Cover and cook on low for an additional 15 to 20 minutes until cheese is melted and bubbly.
  8. Optional: garnish with chopped green onions or chives before serving.

Notes

Use softened cream cheese to avoid clumps. Cook chicken on low for juicier results. Add cheese and bacon near the end to keep cheese melty and bacon crispy. If sauce is too thick, add a splash of chicken broth or milk to loosen it.
