This slow cooker beef noodles recipe delivers tender beef, rich broth, and perfectly cooked noodles for the ultimate comfort food experience.

Ingredients

Scale
  • 2 pounds beef chuck roast, trimmed and cut into chunks
  • 4 cups beef broth (low-sodium preferred)
  • 1/4 cup soy sauce
  • 4 cloves garlic, minced
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon brown sugar
  • 12 ounces wide egg noodles (or rice noodles for gluten-free option)
  • 2 tablespoons cornstarch
  • 2 tablespoons water

Instructions

  1. Trim any excess fat from the chuck roast and cut it into large chunks.
  2. In your slow cooker, add the beef broth, soy sauce, garlic, onion powder, black pepper, and brown sugar. Stir to combine.
  3. Place the beef chunks into the slow cooker, ensuring they’re submerged in the liquid.
  4. Cover and cook on low for 8 hours or high for 4-5 hours, until the beef is tender and easily shredded with a fork.
  5. Cook the egg noodles according to package instructions. Drain and set aside.
  6. In a small bowl, mix the cornstarch and water to create a slurry. Stir the slurry into the slow cooker liquid and let it cook for an additional 10-15 minutes to thicken.
  7. Add the cooked noodles to the slow cooker and gently stir to coat them in the sauce. Serve warm and enjoy!

Notes

For extra flavor, sear the beef chunks in a hot skillet before adding them to the slow cooker. Add vegetables like carrots, celery, or mushrooms for extra texture and nutrition.
