  • 1 pound raw shrimp, peeled and deveined, medium to large size (1620 count recommended)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley (optional for garnish)
  • Wooden or metal skewers (if wooden, soak for 30 minutes before use)

Instructions

  1. Rinse the shrimp under cold water and pat dry thoroughly with paper towels.
  2. In a mixing bowl, whisk together melted unsalted butter, minced garlic, olive oil, fresh lemon juice, smoked paprika, salt, and black pepper. The butter should be warm but not hot.
  3. Toss the shrimp in the garlic butter mixture until evenly coated. Cover and refrigerate for 15-20 minutes.
  4. Preheat the grill or grill pan to medium-high heat, about 400°F (204°C).
  5. Thread about 4-5 shrimp per skewer, leaving a little space between each shrimp.
  6. Place skewers on the grill and cook for 2-3 minutes on one side until shrimp turn pink and start to char lightly. Flip carefully and grill for another 2 minutes. Brush with leftover garlic butter marinade during grilling.
  7. Check for doneness; shrimp should be opaque with pink and white color and firm to the touch but not rubbery.
  8. Serve immediately, sprinkled with fresh chopped parsley and an extra squeeze of lemon if desired.

Notes

Do not over-marinate shrimp to avoid mushy texture; 15-20 minutes is ideal. Preheat grill well to prevent sticking and achieve grill marks. Brush shrimp with garlic butter during grilling for extra flavor. If no grill is available, broil in the oven for 4-5 minutes per side.
