  • 3 cloves garlic, finely minced
  • ½ cup cotija cheese, crumbled
  • 1 large fresh lime, juiced (plus extra wedges for serving)
  • 1 teaspoon chili powder (optional)
  • Salt to taste
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Prepare the garlic butter by combining softened unsalted butter with finely minced garlic, chili powder (if using), and a pinch of salt in a small bowl. Mix well until evenly blended.
  2. Preheat the grill to medium-high heat, about 375°F to 400°F (190°C to 204°C), for 10-15 minutes.
  3. Husk the ears of corn, removing all silk strands, and pat dry with a paper towel.
  4. Using a brush or spoon, generously coat each ear of corn with the garlic butter mixture.
  5. Place the corn directly on the grill grates and cook for 10-12 minutes, turning every 2-3 minutes with tongs to ensure even charring.
  6. Remove the corn from the grill when tender and charred, then immediately sprinkle with crumbled cotija cheese while still hot.
  7. Squeeze fresh lime juice over each ear and sprinkle with chopped cilantro for garnish. Serve immediately with extra lime wedges.

Notes

Chill the garlic butter for 10 minutes before applying if it melts too quickly on the grill. Turn corn frequently to avoid burning and ensure even cooking. For dairy-free, use vegan butter and omit or substitute cotija cheese with nutritional yeast or vegan cheese. If no grill is available, broil corn in the oven at 425°F for about 20 minutes, turning halfway through.
