Salted Honey Cinnamon Cookies

  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 cup (115g) unsalted butter, softened
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (85g) brown sugar
  • 2 tablespoons honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Flaky sea salt for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, cinnamon, and baking soda. Set aside.
  3. In a large mixing bowl, use a hand mixer to beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 minutes.
  4. Mix in the egg, honey, and vanilla extract until fully combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing on low speed until the dough comes together.
  6. Use a cookie scoop or tablespoon to portion out dough balls. Place them about 2 inches apart on the prepared baking sheets.
  7. Lightly press a pinch of flaky sea salt onto the top of each cookie dough ball.
  8. Bake for 10-12 minutes, until the edges are golden brown and the centers look slightly underbaked.
  9. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a cooling rack.

Notes

Chill the dough for 15-20 minutes if it feels too sticky to handle. For a more pronounced flavor, chill the dough for at least 30 minutes before baking.
