This easy gourmet salmon dinner features perfectly seared fillets topped with a rich, tangy garlic lemon butter sauce. Ready in under 30 minutes, it’s a restaurant-worthy meal that’s simple enough for weeknights and elegant enough for special occasions.

  • 4 salmon fillets (6 oz each), skin-on
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh lemon juice (from 1 large lemon)
  • Zest of 1 lemon
  • 2 tablespoons fresh parsley, chopped
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons dry white wine (optional, or substitute chicken broth)

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with kosher salt and freshly ground black pepper.
  2. Heat a large skillet over medium-high heat for 2-3 minutes. Add olive oil and swirl to coat the pan.
  3. Place the salmon fillets skin-side down in the hot pan. Cook undisturbed for 4-5 minutes until the skin is crisp and the salmon releases easily.
  4. Carefully flip each fillet and cook for another 2-4 minutes, until just cooked through and the flesh flakes easily with a fork.
  5. Transfer the salmon to a warm plate and tent loosely with foil to rest.
  6. Lower the heat to medium. Add butter to the same pan. Once melted, stir in minced garlic and sauté just until fragrant, about 30 seconds (do not let garlic brown).
  7. Pour in lemon juice, lemon zest, and white wine (if using). Simmer for 1 minute, scraping up any browned bits from the pan.
  8. Stir in chopped parsley and red pepper flakes (if using). Taste and adjust seasoning as needed.
  9. Plate the salmon fillets skin-side down and spoon the warm garlic lemon butter sauce over the top. Garnish with extra parsley and black pepper. Serve immediately.

Notes

For best results, use fillets of similar thickness and pat them dry before cooking for crispy skin. Watch the garlic closely to avoid burning. The sauce can be adapted with different herbs or a splash of caper brine for extra flavor. Leftovers keep well for up to 2 days and are delicious cold or gently reheated.
