A simple, fresh, and nostalgic summer drink combining juicy watermelon, fresh mint, lime juice, and water for a perfectly refreshing beverage.

Ingredients

Scale
  • 6 cups (900 grams) seedless watermelon, cubed and chilled
  • 1012 large fresh mint leaves, washed and gently bruised
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 1 to cups (240300 ml) cold water
  • 12 teaspoons (510 ml) sugar or honey (optional)
  • Ice cubes for serving

Instructions

  1. Cut about 6 cups (900 grams) of seedless watermelon into cubes and chill.
  2. Place watermelon cubes in a blender or food processor. Add 1 cup (240 ml) cold water and blend on high until smooth, about 1 minute.
  3. Optionally strain the blended watermelon through a fine mesh strainer into a pitcher to remove excess pulp.
  4. Gently bruise 10-12 fresh mint leaves using a muddler or the back of a wooden spoon to release oils without shredding.
  5. Add lime juice and sweetener (if needed) to the pitcher. Stir well to dissolve.
  6. Add the bruised mint leaves to the pitcher and stir gently. Refrigerate for 10 minutes to let flavors marry, but not longer to avoid bitterness.
  7. Before serving, taste and add up to ¼ cup (60 ml) more cold water if desired. Serve over plenty of ice cubes and garnish with extra mint sprigs or lime wedges.

Notes

Use ripe watermelon for best sweetness. Do not over-muddle mint to avoid bitterness. Adjust sweetness last after tasting. Serve immediately or within 1 hour for best freshness. For a fizzy twist, add sparkling water just before serving. Freeze watermelon cubes to use as ice to avoid dilution.
