Refreshing Peach Bellini Cocktail

A vibrant and fresh summer cocktail made with ripe peaches and sparkling wine, perfect for relaxing afternoons and gatherings.

  • 2 large ripe peaches, peeled and pitted
  • 1 to 2 teaspoons sugar (or honey as a natural alternative)
  • 1 teaspoon fresh lemon juice
  • 1 bottle (750 ml) Prosecco or sparkling wine, chilled
  • Ice (optional, for chilling peaches before blending)
  • Mint leaves (optional, for garnish)

Instructions

  1. Prepare the peaches by peeling and pitting them. To peel easily, blanch peaches in boiling water for 30 seconds, then plunge into ice water to slip off skins. (About 5 minutes)
  2. Add peeled peaches to a blender with 1 to 2 teaspoons sugar and 1 teaspoon fresh lemon juice. Blend until smooth and creamy. For a finer texture, strain puree through a fine mesh strainer. (3 to 4 minutes)
  3. Chill the peach puree in the refrigerator for at least 15 minutes to cool and thicken.
  4. Chill champagne flutes or tall glasses in the fridge or freezer for about 10 minutes before serving.
  5. Spoon 2 to 3 tablespoons (30-45 ml) of chilled peach puree into each glass. Slowly pour 4 to 5 ounces (120-150 ml) of chilled Prosecco or sparkling wine into each glass, tilting and stirring gently to combine without losing bubbles. Garnish with a mint leaf if desired and serve immediately.

Notes

Use ripe peaches for best flavor. Chill puree and glasses to keep bubbles lively and prevent watery texture. Pour sparkling wine slowly to avoid foam overflow. Peach puree can be prepared up to 24 hours in advance and stored refrigerated. For a non-alcoholic version, substitute sparkling wine with sparkling water or club soda and add a splash of white grape juice.
