A quick and easy sparkling berry mimosa board perfect for a festive Galentine’s brunch, featuring fresh berries, sparkling wine, and customizable mimosa fixings.

  • 750 ml sparkling wine or champagne (Prosecco or Cava work well)
  • 1 cup (240 ml) fresh-squeezed orange juice
  • 1 cup (150 g) strawberries, hulled and halved
  • 1 cup (150 g) blueberries
  • 1 cup (125 g) raspberries
  • 1 cup (150 g) blackberries
  • 1012 fresh mint leaves for garnish
  • Edible flowers (optional)
  • 12 cups mini toasted baguette slices or crackers
  • Honey or agave syrup (optional, for sweetness)
  • Frozen berries (optional, for chilling drinks)

Instructions

  1. Rinse all fresh berries gently under cold water and pat dry with paper towels. Hull and halve the strawberries. Keep frozen berries in the freezer until just before serving.
  2. Preheat oven to 350°F (175°C). Slice baguette into ¼ inch (6 mm) thick rounds. Arrange on baking sheet and toast for 8-10 minutes until golden and crisp. Let cool.
  3. Place small bowls or ramekins on a large serving board for berries and honey. Scatter mixed berries around the board, grouping colors together. Add toasted baguette slices or crackers on one side. Tuck fresh mint leaves and edible flowers throughout the board.
  4. Pour chilled orange juice into a small pitcher or carafe. Add a drizzle of honey or agave syrup if desired and stir to combine. Have sparkling wine bottle ready to pop.
  5. Invite guests to build their own mimosas by adding orange juice and sparkling wine to their glasses, then garnishing with fresh berries and mint. Use frozen berries as natural ice cubes to keep drinks cold without diluting.
  6. Pro tip: When pouring sparkling wine, tilt your glass at a 45-degree angle to reduce fizz and keep bubbles intact longer.

Notes

Dry berries thoroughly after washing to prevent sogginess. Toast baguette slices evenly to avoid burnt edges. Assemble the board just before serving to keep ingredients fresh. Frozen berries can be used as ice cubes. For non-alcoholic versions, substitute sparkling wine with sparkling berry soda or sparkling water mixed with berry juice.
