A quick and easy frozen peach bellini cocktail made with just three ingredients, perfect for summer afternoons and casual get-togethers. This slushy, bubbly drink is refreshing, indulgent, and crowd-pleasing.

  • 1 ½ cups (225 grams) frozen peaches, unsweetened
  • 1 cup (240 ml) sparkling wine or prosecco, dry or semi-dry
  • 2 tablespoons (30 ml) peach schnapps or peach liqueur
  • Optional: 1 teaspoon honey or simple syrup for added sweetness

Instructions

  1. Scoop about 1 ½ cups (225 grams) of frozen peaches directly from the bag; no need to thaw.
  2. Pour 2 tablespoons (30 ml) of peach schnapps into the blender.
  3. Slowly add 1 cup (240 ml) of chilled sparkling wine or prosecco to the blender.
  4. Pulse the blender a few times to mix ingredients, then blend on medium speed for about 20 seconds until smooth and slushy.
  5. Taste and add a teaspoon of honey or simple syrup if desired for sweetness. If too thick, add a splash more sparkling wine or a few ice cubes and blend again.
  6. Pour into chilled champagne flutes or stemmed glasses. Garnish with a fresh peach slice or mint sprig if desired and serve immediately.

Notes

Keep frozen peaches in the freezer until ready to blend to maintain texture. Pour sparkling wine slowly and blend gently to preserve bubbles. Chill glasses before serving. Leftover cocktail can be stored in the fridge up to 2 hours but will lose fizz and texture.
