A light, crisp, and tangy non-alcoholic mojito mocktail perfect for summer, featuring fresh mint, lime, raw sugar, and bubbly soda water.

Ingredients

Scale
  • 1012 fresh mint leaves
  • 1 whole lime, juiced and sliced
  • 12 teaspoons raw sugar or turbinado sugar (or simple syrup as substitute)
  • 1 cup (240 ml) chilled soda water or club soda
  • Crushed ice
  • Optional: sparkling lemon-lime soda instead of soda water

Instructions

  1. Place 10-12 fresh mint leaves and 1-2 teaspoons of raw sugar at the bottom of a glass. Gently muddle with a muddler or the back of a wooden spoon for about 20 seconds to release mint oils without shredding leaves.
  2. Add the juice of one fresh lime (about 1 fluid ounce) and a couple of lime wedges to the glass. Fill the glass to the top with crushed ice.
  3. Pour about 1 cup (240 ml) of chilled soda water over the ice. Stir gently to mix flavors without flattening the bubbles. Adjust sweetness if needed by adding more sugar or simple syrup. Garnish with a sprig of mint and a lime wheel. Serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Use fresh lime juice for best flavor. Crushed ice chills faster and dilutes slower. Prepare mint and lime juice base ahead but add soda and ice just before serving to keep fizz fresh.
