  • 2 cups fresh strawberries, hulled and chopped (or frozen if out of season)
  • 2 tablespoons granulated sugar (adjust based on berry sweetness)
  • 1 tablespoon lemon juice
  • 1 cup full-fat coconut milk (canned)
  • 2 tablespoons honey or maple syrup (optional)
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries (frozen works too, just thaw slightly)
  • 1 tablespoon lemon juice
  • 1 tablespoon sugar or sweetener of choice

Instructions

  1. Prepare the Strawberry Layer: In a saucepan, combine the chopped strawberries, sugar, and lemon juice. Cook over medium heat for about 8-10 minutes, stirring occasionally. Let it cool completely.
  2. Blend the Coconut Layer: In a blender, combine the coconut milk, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy. Chill in the fridge.
  3. Make the Blueberry Layer: Place the blueberries, sugar, and lemon juice in a blender or food processor. Pulse a few times for chunky texture or blend fully for smoothness. Set aside.
  4. Layer the Popsicles: Pour about one-third of the strawberry mixture into each popsicle mold. Freeze for 30 minutes until firm.
  5. Pour the coconut milk blend over the strawberry layer, filling about one-third of the mold. Freeze again for 30 minutes.
  6. Add the blueberry mixture on top, filling the molds to the top. Insert sticks and freeze for at least 4 hours or overnight.
  7. Unmold and Serve: Run warm water over the outside of the molds for a few seconds to loosen, then gently pull out each popsicle. Enjoy immediately or keep frozen.

Notes

Let each layer freeze completely before adding the next to keep layers distinct. Use full-fat coconut milk for creaminess. Adjust sugar based on berry sweetness. For chunkier texture, reserve some whole berries. Silicone spatulas help spread layers evenly. If no popsicle molds, use small paper cups or ice cube trays with toothpicks.
