  • 8 ounces softened cream cheese
  • 2 tablespoons finely chopped fresh dill
  • 1 English cucumber, thinly sliced (about 1/8-inch thick)
  • 1 teaspoon freshly squeezed lemon juice
  • Pinch of salt
  • Black pepper, freshly ground, to taste
  • Optional: dash of garlic powder or a few chopped chives

Instructions

  1. Trim crusts off 8 slices of sandwich bread using a sharp knife, about 5 minutes.
  2. In a mixing bowl, combine 8 ounces softened cream cheese with 2 tablespoons finely chopped fresh dill, 1 teaspoon lemon juice, a pinch of salt, and black pepper to taste. Add garlic powder or chives if desired. Mix until smooth, about 2 minutes.
  3. Slice one English cucumber into very thin rounds (1/8-inch thick) using a sharp knife or mandoline. Pat slices dry with paper towels to remove excess moisture.
  4. Spread about 1 tablespoon of the cream cheese mixture evenly over each slice of bread.
  5. Layer cucumber slices neatly on four slices of bread, then top with remaining bread slices, cream cheese side down, to form sandwiches.
  6. Cut each sandwich into 2 or 3 small triangles or rectangles, yielding 12-16 bite-sized sandwiches.
  7. Arrange sandwiches on a platter, cover with plastic wrap, and refrigerate for at least 15 minutes before serving.

Notes

Pat cucumber slices dry to prevent soggy sandwiches. Use softened cream cheese for easy spreading. Chill sandwiches before serving to meld flavors and firm bread. Prepare cream cheese mixture ahead and refrigerate. Add cucumber slices just before serving if making ahead to keep bread from getting soggy.
