Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel (optional) and slice 2 ripe peaches into thin wedges, about ¼ inch thick.
  3. In a bowl, toss the sliced peaches with 2 tablespoons of granulated sugar and ¼ teaspoon cinnamon. Let sit for about 5 minutes to draw out juices.
  4. In another bowl, whisk together ½ cup all-purpose flour, 2 tablespoons sugar, ½ teaspoon baking powder, and a pinch of salt.
  5. Stir in 3 tablespoons melted unsalted butter, ¼ cup milk, and ¼ teaspoon vanilla extract. Mix just until combined; batter should be slightly lumpy but cohesive.
  6. Pour the peach mixture including juices into a greased 8-inch or 10-inch cast iron skillet.
  7. Spoon the batter evenly over the peaches, spreading gently but not covering completely.
  8. Bake in the preheated oven for 20-25 minutes until the crust is golden brown and peach filling bubbles around the edges.
  9. Let the cobbler cool for 5-10 minutes before serving to allow juices to thicken.

Notes

If topping browns too fast, tent with foil during baking. Use ripe but firm peaches for best texture. Do not overmix batter to keep topping tender. Butter should be warm but not hot when mixing.
