  • 12 oz flank steak or sirloin, thinly sliced against the grain
  • 3 cups fresh broccoli florets, washed and cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 1/4 cup low sodium soy sauce
  • 2 tablespoons oyster sauce (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water
  • Pinch of red pepper flakes (optional)

Instructions

  1. Thinly slice 12 oz flank steak against the grain into strips about 1/4 inch thick and set aside in a bowl.
  2. In a small bowl, combine 1/4 cup low sodium soy sauce, 2 tablespoons oyster sauce, 1 tablespoon brown sugar, 1 teaspoon sesame oil, minced garlic, and grated ginger. Stir well and set aside.
  3. Wash and cut 3 cups broccoli florets into bite-sized pieces and pat dry.
  4. Pour half of the sauce over the sliced beef and toss to coat evenly. Let marinate for 5 minutes.
  5. Heat a large skillet or wok over high heat. Add 2 tablespoons vegetable oil and swirl to coat the surface.
  6. Add the marinated beef in a single layer. Let sear for about 1 minute without stirring, then stir-fry for 1-2 minutes until mostly cooked but still tender. Remove beef and set aside.
  7. Add more oil if needed. Stir fry broccoli for 3-4 minutes until bright green and crisp-tender. Add 1-2 tablespoons water and cover briefly if broccoli starts to brown too much.
  8. Return beef to the pan with broccoli. Pour in remaining sauce and cornstarch slurry. Stir and cook for 1-2 minutes until sauce is glossy and coats beef and broccoli.
  9. Taste and adjust seasoning. Add a pinch of red pepper flakes if desired. Serve immediately over steamed rice or noodles.

Notes

Slice beef thinly against the grain for tenderness. Do not overcrowd the pan to ensure proper searing. Use a cornstarch slurry to thicken the sauce. Fresh broccoli is preferred for better texture but frozen can be used if thawed and drained. Add toasted sesame oil at the end for a nutty aroma. Leftovers keep well in the fridge for up to 3 days.
