Quick Garlic Butter Shrimp Pasta with Cherry Tomatoes

A quick and easy shrimp pasta dish featuring garlic butter sauce and fresh cherry tomatoes, perfect for busy weeknights and satisfying any occasion.

  • 8 ounces (225 g) spaghetti or linguine
  • Salt, for pasta water
  • 1 pound (450 g) large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter, room temperature
  • 4 cloves garlic, minced
  • 1 pint cherry tomatoes, halved
  • 1/4 teaspoon red chili flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Juice of half a lemon
  • 2 tablespoons chopped fresh parsley
  • Grated Parmesan cheese (optional, for serving)
  • 1/4 cup white wine (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add spaghetti or linguine and cook according to package instructions, usually 8–10 minutes, until al dente. Reserve 1/2 cup (120 ml) pasta water before draining.
  2. While pasta cooks, pat shrimp dry with paper towels and season lightly with salt and pepper.
  3. Heat 2 tablespoons butter in a large skillet over medium heat. Add minced garlic and stir constantly for about 30 seconds until fragrant but not browned.
  4. Add shrimp in a single layer and cook about 2 minutes per side until pink and opaque. Remove shrimp to a plate.
  5. Add remaining 2 tablespoons butter to the skillet. Toss in halved cherry tomatoes and red chili flakes if using. Sauté for 3–4 minutes until tomatoes soften and release juices.
  6. Optional: Splash in 1/4 cup white wine to deglaze the pan. Simmer 1–2 minutes to reduce slightly. Add lemon juice, salt, and pepper to taste.
  7. Return shrimp to skillet. Add drained pasta and half of reserved pasta water. Toss well to coat pasta evenly. Add more pasta water if needed to loosen sauce.
  8. Sprinkle chopped parsley over the top and toss once more. Serve immediately with optional grated Parmesan.

Notes

Do not overcook shrimp to avoid rubberiness; cook until just pink and opaque. Use reserved pasta water to adjust sauce consistency for a silky texture. Burnt garlic will ruin flavor, so stir constantly and watch closely. Optional white wine adds depth. Lemon juice brightens the dish. For dairy-free, substitute butter with olive oil or dairy-free butter.
