Quick 15-Minute Shrimp and Broccoli Garlic Noodles

  • 12 ounces (340 grams) shrimp, peeled and deveined (medium or large size)
  • 2 cups (about 150 grams) broccoli florets, fresh and cut into bite-sized pieces
  • 4 large garlic cloves, minced
  • 8 ounces (225 grams) egg noodles, dried or fresh
  • 3 tablespoons unsalted butter
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Freshly ground black pepper, to taste
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225 g) of egg noodles and cook according to package instructions, usually 6-8 minutes, until al dente. Drain and set aside, reserving about 1/4 cup (60 ml) of pasta water.
  2. While noodles cook, rinse and cut 2 cups (150 g) of broccoli florets into bite-sized pieces.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add shrimp, season with black pepper, and cook for about 2 minutes per side until pink and just cooked through. Remove shrimp and set aside.
  4. In the same skillet, add broccoli and sauté for 3-4 minutes until bright green and crisp-tender.
  5. Lower the heat to medium. Add 3 tablespoons unsalted butter and the minced garlic to the skillet with broccoli. Stir frequently for about 1-2 minutes until garlic is fragrant and lightly golden but not burnt.
  6. Return shrimp to the skillet. Add the cooked noodles and 2 tablespoons low-sodium soy sauce. Toss everything together gently to coat. If it seems dry, add reserved pasta water a tablespoon at a time until you get a silky sauce that clings to the noodles.
  7. Stir in 1/4 teaspoon red pepper flakes (optional) and 1 teaspoon lemon juice for brightness. Taste and adjust seasoning with black pepper or more soy sauce if needed.
  8. Sprinkle with sliced green onions and serve immediately.

Notes

Watch the garlic carefully to avoid burning; garlic burns quickly and turns bitter. Reserve pasta water to loosen the sauce if needed. Do not overcook shrimp to keep it tender. Keep broccoli crisp-tender by sautéing briefly. For gluten-free, substitute rice noodles and use tamari instead of soy sauce. Reheat leftovers gently in a skillet with a splash of water or broth to avoid rubbery shrimp.
