  • 810 pounds spiral-cut ham, pre-cooked and bone-in
  • ½ cup honey (preferably raw or pure)
  • ¾ cup packed dark brown sugar
  • 1 can pineapple rings (810 rings), drained
  • ½ cup pineapple juice (reserved from canned pineapple or fresh squeezed)
  • 2 tablespoons Dijon mustard
  • ½ teaspoon ground cinnamon (optional)
  • 1215 whole cloves
  • Freshly ground black pepper, to taste

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Score the ham surface in a diamond pattern about ½ inch deep using a sharp knife.
  3. Stud the ham with whole cloves by pressing them into the intersections of the diamond cuts.
  4. Place the ham on a roasting rack inside a roasting pan, fat side up. Pour a little water or pineapple juice into the bottom of the pan.
  5. In a bowl, whisk together honey, brown sugar, pineapple juice, Dijon mustard, and cinnamon until smooth and glossy.
  6. Brush the ham generously with about half the glaze, making sure to get into the scored cuts.
  7. Bake uncovered for 1 hour and 15 minutes (about 15 minutes per pound), basting with the remaining glaze every 20 minutes.
  8. Arrange pineapple rings over the ham during the last 20 minutes of baking, securing them with toothpicks if needed. Brush the rings with leftover glaze.
  9. Check the internal temperature with a meat thermometer; it should reach 140°F (60°C). Tent loosely with foil if browning too fast.
  10. Rest the ham for 10-15 minutes after removing from the oven.
  11. Carve and serve the ham sliced with pineapple rings on top, spooning any extra pan juices over for flavor.

Notes

Baste the ham regularly every 20 minutes to build a sticky, caramelized crust. Tent with foil if the glaze starts to burn. Use a meat thermometer to ensure the ham reaches 140°F for safe consumption. If glaze thickens too much, warm gently with pineapple juice before basting again. Leftover ham can be refrigerated for up to 4 days or frozen for up to 3 months.
