  • For the frosting:
  • 1 cup (227 grams) unsalted butter, softened
  • 4 cups (480 grams) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 23 tablespoons (3045 ml) whole milk or heavy cream
  • Extra sprinkles for decorating

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper.
  2. In a medium bowl, sift together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Add eggs one at a time, beating well after each addition and scraping down the bowl.
  5. Mix in vanilla extract and sour cream until just combined.
  6. Reduce mixer speed to low and alternately add the dry ingredients in three batches with the milk, starting and ending with dry ingredients. Mix just until incorporated.
  7. Gently fold in the rainbow sprinkles using a rubber spatula, being careful not to overmix.
  8. Divide the batter evenly between the prepared pans and smooth the tops.
  9. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  10. Cool the cakes in the pans on a wire rack for 10 minutes, then run a knife around the edges and invert onto racks to cool completely.
  11. To make the frosting, beat the butter until creamy. Gradually add powdered sugar, vanilla, and milk or cream, beating until smooth and spreadable.
  12. Place one cake layer on a serving plate and spread a thick layer of frosting on top. Add the second layer and frost the top and sides.
  13. Decorate with extra rainbow sprinkles around the edges or on top.
