  • 1 teaspoon vanilla extract
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 cup chopped pecans, toasted lightly
  • Pinch of salt

Instructions

  1. Make the crust: In a medium bowl, whisk together flour and salt. Add cold, cubed butter. Using a pastry cutter or food processor, pulse until mixture resembles coarse crumbs with pea-sized bits.
  2. Slowly add ice water, 1 tablespoon at a time, until dough just holds together when pinched (about 3-4 tablespoons). Do not overwork.
  3. Shape dough into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  4. Preheat oven to 350°F (175°C).
  5. Roll out the chilled dough on a lightly floured surface into a 12-inch circle. Transfer to a 9-inch pie dish, pressing gently into corners. Trim excess dough and crimp edges. Prick bottom a few times with a fork.
  6. Prepare filling: In a large bowl, whisk together light and dark brown sugars and melted butter until combined.
  7. Add eggs one at a time, whisking well after each addition.
  8. Stir in bourbon, vanilla extract, and a pinch of salt.
  9. Fold in chocolate chips and toasted pecans until evenly distributed.
  10. Pour filling into prepared crust and spread evenly.
  11. Bake at 350°F (175°C) for 45-50 minutes until center is set but slightly wobbly.
  12. Cool completely at room temperature for at least 2 hours before slicing.
