A simple yet special grilled salmon recipe using cedar planks and a sweet-savory maple glaze that infuses the fish with smoky aroma and caramelized flavor.

  • 4 salmon fillets, about 6 ounces (170 grams) each, skin-on
  • 1 cedar plank, 12×7 inches, soaked in water for at least 1 hour
  • 1/4 cup (60 ml) pure maple syrup, preferably Grade A
  • 1 tablespoon (15 ml) Dijon mustard
  • 1 tablespoon (15 ml) olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Optional: chopped fresh dill or parsley for garnish

Instructions

  1. Soak the cedar plank in water for at least 1 hour (up to 3 hours if possible).
  2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, lemon juice, salt, and pepper until smooth.
  3. Preheat grill to medium heat, about 350°F (175°C).
  4. Pat salmon fillets dry and season both sides with salt and pepper.
  5. Brush a generous layer of the maple glaze on the flesh side of each salmon fillet.
  6. Place the soaked cedar plank on the grill grates and close the lid for 3-5 minutes until it starts to smoke and crackle.
  7. Place salmon fillets skin-side down on the cedar plank. Close the grill lid and cook for 12-15 minutes until salmon flakes easily and reaches 145°F (63°C) internal temperature.
  8. Halfway through grilling, brush another light coat of maple glaze on the salmon.
  9. Remove the cedar plank from the grill and let the salmon rest for 3-5 minutes.
  10. Garnish with chopped fresh dill or parsley before serving.

Notes

Soak the cedar plank for at least 1 hour to prevent burning and create smoky steam. Use skin-on salmon for better texture and moisture retention. Apply glaze twice for best caramelization. Monitor grill temperature to avoid burning the glaze. Rest salmon after grilling for juiciness.
