A quick and easy appetizer featuring a creamy wheel of baked brie topped with toasted walnuts and drizzled with honey, perfect for entertaining and cozy gatherings.

  • 1 whole wheel of brie cheese (about 8 oz / 225 g), preferably creamy and ripe with a soft rind
  • 1/2 cup (60 g) raw walnuts, toasted until lightly golden
  • 2 tablespoons (30 ml) good-quality honey, such as wildflower or clover
  • Fresh thyme sprigs (optional, for garnish)
  • Crackers or sliced baguette, for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Toast the walnuts by placing 1/2 cup raw walnuts on a dry baking sheet or skillet. Toast for 5-7 minutes, stirring occasionally, until golden and fragrant. Set aside to cool.
  3. Place the whole brie wheel on a parchment-lined baking sheet or oven-safe dish. Optionally, score the rind lightly with a knife in a crisscross pattern to help the cheese ooze evenly.
  4. Drizzle 2 tablespoons of honey evenly over the top of the brie. Sprinkle the toasted walnuts on top, pressing gently so they stick to the honey.
  5. Bake the brie in the oven for 12-15 minutes, or until the cheese is soft and just starting to ooze but not fully collapsed.
  6. Remove from the oven and let it rest for 2-3 minutes to set slightly for easier serving. Garnish with fresh thyme sprigs if using.
  7. Transfer the brie to a serving platter and surround it with crackers or sliced baguette. Use a small knife or spreader to scoop the warm, melty cheese and serve immediately.

Notes

Toast walnuts carefully to avoid burning; watch the brie while baking to prevent overcooking and excessive leaking. For a nut-free version, substitute walnuts with toasted pumpkin seeds. Serve with sturdy crackers or sliced baguette to avoid crumbling. Leftovers can be refrigerated for up to 2 days and reheated in a 300°F oven for about 10 minutes. Avoid microwaving to prevent cheese separation.
