A festive and easy-to-make fruit pizza featuring a sugar cookie crust, cream cheese frosting, and fresh fruit arranged in an American flag design, perfect for patriotic celebrations.

  • 1 cup (200 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups (312 g) all-purpose flour

  • 1/4 teaspoon salt
  • 8 ounces (226 g) cream cheese, softened
  • 1/2 cup (115 g) unsalted butter, softened
  • 1 1/2 cups (180 g) powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Optional: 1 tablespoon lemon juice
  • 1 1/2 cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 kiwi, peeled and thinly sliced
  • Optional: 1/2 cup raspberries or red grapes

Instructions

  1. Preheat the oven to 350°F (175°C). Line your pizza pan or baking sheet with parchment paper.
  2. In a large bowl, cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  4. In a separate bowl, whisk 2 1/2 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms. Do not overmix.
  6. Evenly spread and press the dough into the prepared pan, about 1/4-inch thick.
  7. Bake for 15-18 minutes until edges are golden and center is set but still soft.
  8. Remove from oven and cool completely on a cooling rack.
  9. In a medium bowl, beat together 8 ounces softened cream cheese and 1/2 cup softened butter until smooth.
  10. Gradually add 1 1/2 cups powdered sugar and 1 teaspoon vanilla extract, beating on low speed until combined. Add 1 tablespoon lemon juice if using.
  11. Spread the cream cheese frosting evenly over the cooled crust.
  12. Arrange blueberries in the top-left corner in a rectangle shape for the stars.
  13. Create red stripes by laying out sliced strawberries in horizontal rows.
  14. Fill spaces between red stripes with thin kiwi slices to mimic white stripes.
  15. Refrigerate the assembled fruit pizza for at least 30 minutes before serving.

Notes

Keep cream cheese and butter softened but not melted for smooth frosting. Cool crust completely before frosting to prevent melting. Slice strawberries thinly for neat fruit placement. Chill assembled pizza before slicing for clean cuts. Use parchment paper to prevent sticking. For gluten-free, substitute almond flour; for dairy-free, use dairy-free cream cheese and coconut oil.
