  • 1 cup (240g) peanut butter
  • 1/4 cup (57g) unsalted butter, softened
  • 1 cup (125g) powdered sugar
  • 2 cups (50g) crispy rice cereal
  • 1 cup (175g) chocolate chips (semi-sweet or milk)
  • 1 tablespoon (15ml) coconut oil (optional)

Instructions

  1. In a large mixing bowl, combine peanut butter, softened butter, and powdered sugar. Stir until smooth and fully combined.
  2. Gently fold in crispy rice cereal. Mix until the cereal is evenly coated and the mixture holds together.
  3. Using a cookie scoop or spoon, take about 1 tablespoon of the mixture and roll it into a ball using your hands. Place each ball onto a parchment-lined baking sheet.
  4. Refrigerate the balls for 15-20 minutes to firm them up before coating.
  5. In a double boiler or microwave-safe bowl, melt chocolate chips with coconut oil (if using). Stir until smooth.
  6. Dip each chilled ball into the melted chocolate, ensuring it’s fully covered. Use a fork to lift the ball out, letting excess chocolate drip off.
  7. Return the chocolate-coated balls to the parchment-lined baking sheet and refrigerate for about 10 minutes, or until the chocolate hardens.

Notes

If the mixture feels too sticky while rolling, refrigerate it for a few minutes to firm up. Add a pinch of sea salt on top of the chocolate coating for a sweet and salty twist.
