  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (75g) walnuts, toasted and roughly chopped

Instructions

  1. Brown the butter: Place 1/2 cup (115g) unsalted butter in a medium saucepan over medium heat. Stir frequently as it melts, then foams, and finally turns a golden brown with nutty aroma, about 5-7 minutes. Watch closely to avoid burning. Once browned, remove from heat and let it cool for 5 minutes.
  2. Toast the walnuts: While the butter cools, toast 3/4 cup (75g) walnuts in a dry skillet over medium heat for 3-5 minutes, stirring often, until fragrant and slightly darker. Set aside to cool.
  3. Preheat the oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line with parchment paper for easy removal.
  4. Mix wet ingredients: In a large bowl, combine the mashed bananas, browned butter, granulated sugar, brown sugar, eggs, and vanilla extract. Stir gently until just combined—do not overmix.
  5. Mix dry ingredients: In a separate bowl, whisk together the flour, baking soda, and salt.
  6. Combine wet and dry ingredients: Gradually add the dry ingredients into the wet banana mixture, folding carefully until no flour streaks remain. Fold in most of the toasted walnuts, reserving some for topping.
  7. Pour batter into the prepared loaf pan and spread evenly. Sprinkle the remaining walnuts on top.
  8. Bake for 60-70 minutes. Start checking at 60 minutes by inserting a toothpick in the center; if it comes out clean or with a few moist crumbs, it is done. If not, bake another 5-10 minutes, watching carefully.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  10. Slice and enjoy once fully cooled.
